September Harvest of the Month – Pumpkin

Health Benefits of Pumpkin: The antioxidants and vitamins contained in pumpkin can prevent degenerative damaged to eyes.  The potassium contained in pumpkin can have a positive effect on blood pressure.  Pumpkin is one of the best-known sources of beta-carotene, a powerful antioxidant that gives orange vegetables and fruits their vibrant color.*

Calories: One cup of cooked pumpkin contains 49 calories.*

Other Nutritional Facts: One cup of cooked pumpkin contains 1.76 grams of protein, 0.17 grams of fat and no cholesterol.*

Fun Fact: In early colonial times, pumpkins were used as an ingredient for the crust of pies, not the filling.**
