May Harvest of the Month – Peas

Vitamins: Peas are loaded with vitamin A, B and C

Vitamin K: One cup of peas has 46% of your RDA of vitamin K

Fiber: Peas are high in fiber, low in fat and like all vegetables, contain no cholesterol

Protein: A ¾ cup serving of peas has more protein that ¼ cup of almonds

Fact: Peas were favored by the ancient Egyptians who buried them in their tombs for use in the afterlife
